A Bold Expression of Patience and Craftsmanship
Calle 23 Añejo is distilled from 100% hand-harvested blue Weber agave, cooked slowly in autoclaves to preserve the plant’s natural sweetness. The juice is fermented using proprietary yeast developed by Sophie herself, a nod to her background in microbiology, which gives the tequila its distinctive aromatic fingerprint.
Once distilled, the Añejo is aged for 16 months in ex-bourbon barrels — longer than the minimum required — allowing the spirit to develop a rich, golden hue and a layered, complex profile. This extra time in oak imparts warm, woody notes while allowing the agave’s natural sweetness and spice to shine through.
